These flavor-related challenges include pronounced 'wort-like' notes, excessive sweetness, and a lack of desirable aroma complexity. The industry is trying to improve the taste of non-alcoholic beer by trying new techniques and yeasts. A newly isolated maltose-negative brewer's yeast (M-I) from an industrial-scale brewery collection has attracted attention due to its reduced wort-like flavor. This study aims to characterize the volatile profile of a newly isolated maltose-negative brewer's yeast (M-I) in comparison with the well-known Saccharomycodes ludwigii. The novelty of this work lies in evaluating the aroma potential of a maltose-negative isolate newly applied in industrial brewing and its contribution to improving the flavor quality of non-alcoholic beer. An SPME-GC/MS system was used to analyze aroma compounds. According to volatile compound analysis, the M-I sample has higher amounts of esters and higher alcohol composition than the S. ludwigii beer sample. Also, it has lower amounts of Strecker aldehydes, which can give a worty off-flavor. Sensory analysis revealed that, interestingly, the control S. ludwigii sample was rated as having stronger ester notes, along with more pronounced sour and bitter characteristics, whereas the M-I sample was perceived as having a more balanced flavor, leading to a more favorable rating by the panelists.Öğe Effects of terroir on the terpene compounds of Muscat of Bornova Native white grape variety grown in Turkey(E D P Sciences, 2015) Celik, Zeynep Dilan; Karaoglan, Selin Yabaci; Darici, Merve; Kelebek, Haşim; Isci, Burcak; Kacar, Ege; Altindisli, AhmetMuscat of Bornova is a white and aromatic native grape variety of Vitis vinifera which is largely predominant in the I. zmir-Manisa province of the Aegan region. In this study, the effect of three different terroirs (Kemaliye, Halilbeyli, Menderes) located in I. zmir-Manisa province and two different years (2013-2014) on the terpene compounds of Muscat of Bornova grapes were investigated. The terpene compounds were extracted by using liquid-liquid extraction method and identified and quantified by GC-MS-FID. In 2013 vintage eighteen terpene compounds were identified and quantified. The concentration of total terpene compounds in Muscat of Bornova grapes from Menderes determined 2.1 mg/l, in Halilbeyli 1.3 mg/l and in Kemaliye 1.7 mg/l. In 2014 vintage eighteen terpene compounds were identified and quantified. In 2014 a total concentration of terpene compounds decreased in grapes from Menderes and determined 1.8 mg/L, in Halilbeyli the results were the same as the first vintage and found 1.3 mg/l and in Kemaliye there was an increase with 2.6 mg/l. Among monoterpenes, linalool, a-terpineol, citronellol, nerol and geraniol show significant differences between different terroirs.Öğe Reference Breast Phantoms for Low-Cost Microwave Imaging(Univ North, 2020) Aydin, Emine Avsar; Karaoglan, Selin YabaciMicrowave imaging provides an alternative method for breast cancer screening and the diagnosis of cerebrovascular accidents. Before a surgical operation, the performance of microwave imaging systems should be evaluated on anatomically detailed anthropomorphic phantoms. This paper puts forward the advances in the development of breast phantoms based on 3D printing structures filled with liquid solutions that mimic biological tissues in terms of complex permittivity in a wide microwave frequency band. In this paper; four different experimental scenarios were created, and measurements were performed, and although there are many vector network analyzers on the market, the miniVNA used in this study has been shown to have potential in many biomedical applications such as portable computer-based breast cancer detection studies. We especially investigated the reproducibility of a particular mixture and the ability of some mixes to mimic various breast tissues. Afterwards, the images similar to the experimentally created scenarios were obtained by implementing the inverse radon transform to the obtained data.
